Our Lettuce scent is the green, farm-fresh kind of scent. Definitely not Iceberg. The Romans ate a lot of lettuce (The better for all that conquering and fiddling on their schedule). In the earlier period they ate it at the end of the meal as a digestive. In later Roman times it was eaten at the beginning as an appetizer, in salads pureed and pickled!

In the 5th century the Chinese were planting and consuming it. But, it doesn't show up in European gastronomy again until a mention in the Canterbury Tales. It was eaten during this period but also used medicinally, and as a sleep aid. Lettuce seeds were taken to the "new world" on the second voyage of Columbus in 1494.
